Although Hispanic Americans are the fastest growing minority in the United States, the populations’ diabetes and chronic liver disease mortality is 50% higher than that of whites. As of 2013, hispanic Americans were faced with chronic liver disease/cirrhosis as 6th leading cause of death, with nonalcoholic fatty liver disease being the most common form of chronic liver disease. Now, what causes chronic liver disease and why are Hispanic Americans so vulnerable against it?

Chronic liver disease occurs when scar tissue begins to replace healthy tissue in the liver, resulting in slow blood flow which can lead the liver to malfunction. The liver is in charge of creating bile to aid digestion, removing toxin waste, storing sugar for energy, and creating new proteins. The smallest malfunction can lead to serious damage to the rest of the body.

Chronic liver disease is known to be caused by hepatitis, high cholesterol, triglycerides and blood pressure, and alcohol abuse. Considering that Mexican Americans make a third of the American population with high LDL cholesterol levels and Hispanic Americans are 2nd in the nation with the highest number of deaths by alcohol poisoning, it’s only natural that they are also prone to getting cirrhosis.

However, artichoke, an edible thistle first found by the Greeks and Romans, contains cynarin, which is responsible for its choleretic and cholagogue properties in the liver. Choleretic triggers bile production and cholagogue triggers the bile release from the liver. Both substances have the role of properly transporting the bile from the liver to the gallbladder. In addition, artichoke also contains an incredible amount of antioxidants, rich enough to be paralleled to dark chocolate and red wine, and a substantial amount of dietary fibers, which aids in digestion.

Along with its bile stimulant, artichoke was consumed because of its dietary fibers. It was eaten by members of high society during the times of the Greeks and Romans. In addition. They used it against jaundice, hepatitis, diabetes, and as a aphrodisiac. The artichokes’ origin is believed to be told in a Greek myth, where on his way from a visit to Poseidon, Zeus met a beautiful mortal woman. Instantly seducing her and making her a goddess to keep her close in Olympus. However, she became homesick and once Zeus caught her trying to get back home, he turned her into an artichoke.

Although this veggie had a rough beginning with the Greek gods, its future and consumption can be a brighter one. Once eaten as a delicacy to the elite with honey and vinegar, today it can be eaten in dip, risotto, stuffed and soup.
